  • 4 medium chicken breasts
  • 2 large onions, thinly sliced
  • 3 tbsp butter, divided
  • 1 cup broth (beef or chicken)
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp arrowroot powder (or cornstarch)
  • 1 cup grated Gruyère cheese (or mozzarella)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, melt 2 tbsp butter over medium-high heat and cook onions with 1/4 cup broth until browned and softened.
  3. Pound chicken to 1 inch thick, season with thyme, salt, and pepper.
  4. In another skillet, use remaining butter to sear chicken on both sides.
  5. Mix remaining broth with arrowroot powder, add to onions, and thicken.
  6. Place chicken back in skillet, top with onion mixture and cheese.
  7. Bake for 8-10 minutes or until chicken reaches 165°F (74°C).

Notes

  • Substitute Gruyère with mozzarella if desired.
  • Use beef broth for a deeper flavor or chicken broth for a lighter version.
  • Arrowroot powder can be replaced with cornstarch for thickening.
