- 4 medium chicken breasts
- 2 large onions, thinly sliced
- 3 tbsp butter, divided
- 1 cup broth (beef or chicken)
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp arrowroot powder (or cornstarch)
- 1 cup grated Gruyère cheese (or mozzarella)
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, melt 2 tbsp butter over medium-high heat and cook onions with 1/4 cup broth until browned and softened.
- Pound chicken to 1 inch thick, season with thyme, salt, and pepper.
- In another skillet, use remaining butter to sear chicken on both sides.
- Mix remaining broth with arrowroot powder, add to onions, and thicken.
- Place chicken back in skillet, top with onion mixture and cheese.
- Bake for 8-10 minutes or until chicken reaches 165°F (74°C).
Notes
- Substitute Gruyère with mozzarella if desired.
- Use beef broth for a deeper flavor or chicken broth for a lighter version.
- Arrowroot powder can be replaced with cornstarch for thickening.
