  • 1 tbsp olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp freshly grated ginger
  • 6 cups chicken bone broth
  • 3 cups shredded cooked chicken
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp turmeric
  • ½ lemon, juiced
  • ½ orange, juiced
  • ¼ cup fresh chopped parsley

Instructions

  1. Cook pastina according to package instructions; set aside.
  2. Heat olive oil in a large pot. Add onion, garlic, and ginger; sauté until softened.
  3. Pour in chicken broth and add shredded chicken. Bring to a boil.
  4. Stir in salt, pepper, turmeric, lemon juice, orange juice, and parsley. Simmer for 5 minutes.
  5. Serve hot over cooked pastina.
