- 1 cup pastina pasta
- 1 tbsp olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 tbsp freshly grated ginger
- 6 cups chicken bone broth
- 3 cups shredded cooked chicken
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp turmeric
- ½ lemon, juiced
- ½ orange, juiced
- ¼ cup fresh chopped parsley
Instructions
- Cook pastina according to package instructions; set aside.
- Heat olive oil in a large pot. Add onion, garlic, and ginger; sauté until softened.
- Pour in chicken broth and add shredded chicken. Bring to a boil.
- Stir in salt, pepper, turmeric, lemon juice, orange juice, and parsley. Simmer for 5 minutes.
- Serve hot over cooked pastina.

- For extra flavor, add a parmesan rind while simmering.
- Store broth and pastina separately to maintain texture if not serving immediately.
