This fresh Cucumber Avocado Salsa is mouthwatering yumminess with every bite and will easily become one of your favorite appetizers. It’s loaded with simple ingredients and makes an amazing topping for salmon or chicken too!

- 1 large cucumber, diced
- 2 ripe avocados, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño pepper, seeded and minced
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- Tortilla chips, for serving
Instructions
- In a large mixing bowl, combine the diced cucumber, diced avocado, chopped red onion, chopped cilantro, and minced jalapeño pepper.
- Drizzle the fresh lime juice and olive oil over the salsa ingredients, and toss gently to coat.
- Season the cucumber avocado salsa with salt and black pepper to taste, adjusting as needed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Before serving, give the salsa a final stir, then transfer to a serving bowl.
- Serve the refreshing cucumber avocado salsa with tortilla chips for dipping.
