  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 1 cup mashed sweet potato (about 1 medium sweet potato)
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or butter.
  • In a medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, ground ginger, and ground cloves until well combined. Set aside.
  • In a large mixing bowl, beat the eggs, granulated sugar, and light brown sugar together until smooth.
  • Add the vegetable oil, mashed sweet potato, milk, and vanilla extract to the bowl with the egg mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • Fold in the chopped pecans or walnuts, if using.
  • Pour the batter into the prepared loaf pan, spreading it out evenly.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the sweet potato bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Once cooled, slice and serve the delicious sweet potato bread.
