- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup vegetable oil
- 1 cup mashed sweet potato (about 1 medium sweet potato)
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick cooking spray or butter.
- In a medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, ground ginger, and ground cloves until well combined. Set aside.
- In a large mixing bowl, beat the eggs, granulated sugar, and light brown sugar together until smooth.
- Add the vegetable oil, mashed sweet potato, milk, and vanilla extract to the bowl with the egg mixture, and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Fold in the chopped pecans or walnuts, if using.
- Pour the batter into the prepared loaf pan, spreading it out evenly.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the sweet potato bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, slice and serve the delicious sweet potato bread.
Notes
- For added flavor, you can add 1/2 cup of chopped nuts or raisins to the batter.
