Description
A simple and delicious bruschetta recipe that’s perfect for any occasion. Fresh tomatoes, basil, and garlic on toasted bread.
Ingredients
Scale
- 16 oz baguette, cut into ½ inch slices
- ½ tsp garlic powder
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 4 large beef steak tomatoes, diced
- ¼ cup purple onion, diced
- ¼ cup basil, thinly sliced into ribbons
- 1 tbsp balsamic vinegar
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Turn your oven broiler to high. Line a baking sheet with foil and place the sliced baguette pieces on it. Spritz the baguette slices with olive oil cooking spray (or brush with olive oil), then sprinkle with garlic powder.
- Toast the bread for a minute or two, until nice and golden. Remove from the oven, flip the bread over, and repeat the steps above.
- Meanwhile, add the 3 tbsp of olive oil to a small skillet over medium heat. Once warm, add in the garlic and stir briefly before removing from heat. Be careful not to burn the garlic! Place the garlic-infused oil in a large bowl to let cool.
- Once the oil is cooled, add in the diced tomatoes, onion, basil, balsamic vinegar, salt, and pepper. Gently stir to combine.
- Serve the mixture on top of the toasted baguette slices.
Notes
- You can add a sprinkle of Parmesan cheese on top for extra flavor.
- For a twist, try adding a drizzle of pesto on the bread before adding the tomato mixture.
