For the Sloppy Joe Filling:

  • 1 pound ground beef

  • 1 teaspoon yellow mustard

For the Cornbread Cups:

  • 1 (8.5-ounce) package corn muffin mix
  • 1/3 cup milk
  • 1 large egg
  • 1/2 cup shredded cheddar cheese

Instructions

  • Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick cooking spray or butter.
  • In a large skillet, cook the ground beef over medium-high heat until browned and no longer pink. Drain off any excess grease.
  • Add the diced onion and green bell pepper to the skillet with the cooked ground beef, and cook for 2-3 minutes, or until softened.
  • Stir in the ketchup, brown sugar, Worcestershire sauce, yellow mustard, salt, and black pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally, until heated through and slightly thickened. Remove from heat and set aside.
  • In a medium mixing bowl, combine the corn muffin mix, milk, and egg until just moistened. Do not overmix.
  • Spoon 1 tablespoon of the cornbread batter into the bottom of each muffin cup, spreading it out evenly to form the base.
  • Spoon about 2 tablespoons of the sloppy joe filling on top of the cornbread batter in each muffin cup, spreading it out evenly.
  • Top the sloppy joe filling with a sprinkle of shredded cheddar cheese.
  • Bake in the preheated oven for 15-18 minutes, or until the cornbread is golden brown and cooked through.
  • Remove the sloppy joe cornbread cups from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
