For the Sloppy Joe Filling:

- 1/3 cup milk
- 1 large egg

Instructions
- Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick cooking spray or butter.
- In a large skillet, cook the ground beef over medium-high heat until browned and no longer pink. Drain off any excess grease.
- Add the diced onion and green bell pepper to the skillet with the cooked ground beef, and cook for 2-3 minutes, or until softened.
- Stir in the ketchup, brown sugar, Worcestershire sauce, yellow mustard, salt, and black pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally, until heated through and slightly thickened. Remove from heat and set aside.
- In a medium mixing bowl, combine the corn muffin mix, milk, and egg until just moistened. Do not overmix.
- Spoon 1 tablespoon of the cornbread batter into the bottom of each muffin cup, spreading it out evenly to form the base.
- Spoon about 2 tablespoons of the sloppy joe filling on top of the cornbread batter in each muffin cup, spreading it out evenly.
- Top the sloppy joe filling with a sprinkle of shredded cheddar cheese.
- Bake in the preheated oven for 15-18 minutes, or until the cornbread is golden brown and cooked through.
