  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 20 oz can pineapple chunks, drained
  • 15 oz can mandarin oranges, drained
  • 1 cup sliced strawberries
  • 1 cup diced kiwi
  • 2 bananas, sliced
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped pecans (optional)

Instructions

  • In a large bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and mix until well combined.
  • In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully combined.
  • Add the drained pineapple chunks, mandarin oranges, sliced strawberries, diced kiwi, and sliced bananas to the bowl. Gently fold the fruit into the cheesecake mixture.
  • Stir in the sweetened shredded coconut and chopped pecans (if using).
  • Chill the salad in the refrigerator for at least 1 hour before serving.
