- 1/4 cup granulated sugar

- 16 oz cream cheese, softened

- 2 large eggs
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Fresh lemon slices and mint leaves for garnish
Instructions
- Preheat Oven: Preheat your oven to 325°F (165°C). Line a mini muffin tin with paper liners.
- Prepare Crust: In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until well combined.
- Form Crust: Press about 1 tablespoon of the crumb mixture into the bottom of each mini muffin cup. Bake for 5 minutes, then remove from the oven and set aside.
- Prepare Filling: In a large bowl, beat the softened cream cheese and 1 cup granulated sugar until smooth and creamy.
- Add Eggs: Add the eggs, one at a time, beating well after each addition. Mix in the lemon zest, lemon juice, and vanilla extract until fully incorporated.
- Fill Cups: Spoon the cheesecake mixture over the baked crusts, filling each cup almost to the top.
- Bake Cheesecakes: Bake for 18-20 minutes, or until the centers are set. Allow the cheesecake bites to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare Whipped Cream: In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
- Garnish: Pipe or dollop the whipped cream on top of each cooled cheesecake bite. Garnish with fresh lemon slices and mint leaves before serving.
