- 1 package cornbread mix
- 1/2 pound ground beef or alternative
- 1 cup shredded Mexican cheese blend
- 1 can (8 oz) corn, drained
- 1 can (10 oz) diced tomatoes & green chilies, drained
- 1/2 cup red bell pepper, chopped
- 1/4 cup onion, chopped
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a baking dish.
- Prepare the cornbread mix according to package instructions. Pour into the baking dish.
- In a skillet, cook the ground beef, bell pepper, and onion until the beef is browned. Drain excess fat.
- Stir in the corn, tomatoes & green chilies, and cumin. Season with salt and pepper.
- Spoon the beef mixture over the cornbread layer. Top with shredded cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and the cornbread is cooked.
- Let stand for 5 minutes before serving.
Notes
- For a vegetarian version, substitute ground beef with a meat alternative or beans.
- Adjust the level of spice with more or less diced tomatoes & green chilies.
