These roasted sweet potato rounds are topped with a drizzle of honey and crumbled feta, creating a delightful balance of sweet and savory flavors. A perfect appetizer or snack for any gathering!

Ingredients

Scale
  • 2 large sweet potatoes, peeled and sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup honey
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss the sweet potato rounds with olive oil, ground cinnamon, paprika, salt, and pepper until evenly coated.
  • Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and golden brown.
  • While the sweet potatoes are roasting, warm the honey in a small saucepan over low heat until it becomes more liquid and easy to drizzle.
  • Once the sweet potatoes are done, remove them from the oven and drizzle with the warmed honey.
  • Sprinkle crumbled feta cheese over the top and garnish with chopped fresh parsley, if desired.
  • Serve warm as a delightful side dish or appetizer.

Notes

  • For a more intense flavor, you can roast the sweet potatoes a bit longer to caramelize the edges.
  • Substitute goat cheese for feta if desired.
  • This dish pairs well with a side salad or can be served as part of a tapas-style meal.
