- 1 lb medium-sized shrimp, peeled and deveined
- 1 lb rigatoni pasta
- 2 tbsp extra virgin olive oil
- 5 cloves garlic, minced
- 1 shallot, minced
- 1 tsp red pepper flakes (optional)
- ½ cup sun-dried tomatoes, chopped
- ½ cup tomato sauce
- ¼ cup white wine
- ½ cup vegetable broth
- Salt and pepper to taste
- Fresh parsley and grated Parmesan cheese for garnish
Instructions
- Season the steak with salt and pepper and let it rest at room temperature for 30 minutes.
- Cook pasta according to package instructions until al dente, drain and set aside.
- In a cast-iron skillet over high heat, sear the steak for 5 minutes on each side, then let it rest.
- In the same skillet, add olive oil, garlic, shallot, and sun-dried tomatoes. Sauté until fragrant.
- Deglaze the pan with white wine, then add tomato sauce and vegetable broth. Simmer for 10 minutes.
- Add shrimp to the sauce, cooking until pink, about 2 minutes.
- Thinly slice the steak and add it to the skillet. Toss in the cooked pasta.
- Serve garnished with parsley and Parmesan cheese.
