  • 1 lb medium-sized shrimp, peeled and deveined
  • 1 lb rigatoni pasta
  • 2 tbsp extra virgin olive oil
  • 5 cloves garlic, minced
  • 1 shallot, minced
  • 1 tsp red pepper flakes (optional)
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup tomato sauce
  • ¼ cup white wine
  • ½ cup vegetable broth
  • Salt and pepper to taste
  • Fresh parsley and grated Parmesan cheese for garnish

Instructions

  1. Season the steak with salt and pepper and let it rest at room temperature for 30 minutes.
  2. Cook pasta according to package instructions until al dente, drain and set aside.
  3. In a cast-iron skillet over high heat, sear the steak for 5 minutes on each side, then let it rest.
  4. In the same skillet, add olive oil, garlic, shallot, and sun-dried tomatoes. Sauté until fragrant.
  5. Deglaze the pan with white wine, then add tomato sauce and vegetable broth. Simmer for 10 minutes.
  6. Add shrimp to the sauce, cooking until pink, about 2 minutes.
  7. Thinly slice the steak and add it to the skillet. Toss in the cooked pasta.
  8. Serve garnished with parsley and Parmesan cheese.
