  • 1 (8.5 oz) package cornbread mix
  • 1 (14.75 oz) can creamed corn
  • 2 eggs
  • ½ cup milk
  • 2 cups shredded cheddar cheese, divided
  • lbs ground beef
  • 1 (15 oz) can sloppy joe sauce

Instructions

  1. Preheat the oven to 400°F and grease a 13×9 inch baking dish.
  2. In a large bowl, mix cornbread mix, creamed corn, eggs, milk, and 1 cup of cheese. Pour into the baking dish and bake for 20 minutes.
  3. While the base is baking, cook the ground beef in a skillet until browned, then mix in the sloppy joe sauce.
  4. Remove the base from the oven, spread the beef mixture over it, top with remaining cheese, and bake for an additional 20 minutes.
  5. Let cool for 5 minutes before serving.

Notes

  • For a lighter version, substitute ground beef with ground turkey.
