- Ground Beef Layer:
- 1 ½ pounds ground beef
- ½ cup onion, diced
- ½ cup scallion, chopped
- 2 cloves garlic, minced
- Sauce:
- 1 cup tomato puree
- ¼ cup ketchup
- 1 tablespoon Worcestershire sauce
- 2 tablespoons molasses
- 1 tablespoon paprika
- 1 tablespoon chili powder
- 1 tablespoon coconut aminos or tamari
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Potato Crust:
- 3 large russet potatoes
- ¼ cup heavy cream
- ½ cup shredded cheddar
Instructions
- Preheat the Oven:
- Preheat your oven to 375º F (190º C).
- Prepare the Potatoes:
- Peel the potatoes and chop them into chunks.
- Place them in a pot of water and bring to a boil. Cook until the potatoes are soft, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add the heavy cream and shredded cheddar to the potatoes.
- Use an electric mixer to whip the potatoes until smooth and creamy.
- Cook the Meat:
- In a skillet, heat the olive oil over medium heat.
- Add the diced onion, chopped scallion, and minced garlic. Cook for about 3 minutes, until the onions are translucent.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
- Make the Sauce:
- While the meat is cooking, combine the tomato puree, ketchup, Worcestershire sauce, molasses, paprika, chili powder, and coconut aminos or tamari in a bowl. Mix well.
- Pour the sauce mixture into the skillet with the meat and stir to combine.
- Let the mixture simmer for about 10 minutes.
- Assemble the Pie:
- Grease a springform pan or a baking dish.
- Add the mashed potatoes to the pan, pressing them up against the sides to form a crust with an indentation in the middle for the meat.
- Spoon the meat mixture into the potato crust, spreading it out evenly.
- Bake:
- Place the assembled pie in the preheated oven.
- Bake for 25 minutes, or until the meat is bubbly and the top is slightly browned.
- Serve:
- Remove the shepherd’s pie from the oven and let it cool for a few minutes before serving.
- Serve hot and enjoy your delicious homemade shepherd’s pie!
