  • 4 double-cut pork loin chops (about 1 1/2 inches thick)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons butter

Instructions

  • Preheat Oven: Preheat the oven to 375°F (190°C).
  • Prepare Stuffing: In a mixing bowl, combine the breadcrumbs, Parmesan cheese, mozzarella cheese, parsley, garlic, olive oil, oregano, thyme, salt, and pepper. Mix well to create the stuffing.
  • Cut Pockets in Pork Chops: Cut a pocket into each pork chop by slicing horizontally through the center, being careful not to cut all the way through.
  • Stuff Pork Chops: Stuff each pork chop with an even amount of the prepared stuffing, pressing the edges to seal.
  • Sear Pork Chops: In an ovenproof skillet, melt the butter over medium-high heat. Add the stuffed pork chops and sear for about 2-3 minutes on each side, until they are golden brown.
  • Bake: Pour the chicken broth into the skillet and transfer it to the preheated oven. Bake for 20-25 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).
  • Rest and Serve: Let the pork chops rest for a few minutes before serving.
