- 6 large flour tortillas
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (16 oz) refried beans
- 3 cups shredded Mexican cheese blend
- 1 can (14.5 oz) Mexican-style diced tomatoes, undrained
- Optional garnishes: sour cream, diced tomatoes, shredded lettuce, avocado slices
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat. Drain grease and stir in taco seasoning, black beans, and diced tomatoes. Simmer for 5 minutes.
- In a 9×13 inch baking dish, layer two tortillas, spread half the refried beans, half the meat mixture, and 1 cup cheese. Repeat layers.
- Top with remaining tortillas and cheese. Cover with foil and bake for 25-30 minutes. Uncover and bake for an additional 5 minutes until cheese is bubbly.
- Serve with desired garnishes.
Notes
- For a lighter version, substitute ground beef with ground turkey or chicken.
- Make it vegetarian by using a meat substitute and adding more beans or vegetables.
