  • 6 large flour tortillas
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (16 oz) refried beans
  • 3 cups shredded Mexican cheese blend
  • 1 can (14.5 oz) Mexican-style diced tomatoes, undrained
  • Optional garnishes: sour cream, diced tomatoes, shredded lettuce, avocado slices

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat. Drain grease and stir in taco seasoning, black beans, and diced tomatoes. Simmer for 5 minutes.
  3. In a 9×13 inch baking dish, layer two tortillas, spread half the refried beans, half the meat mixture, and 1 cup cheese. Repeat layers.
  4. Top with remaining tortillas and cheese. Cover with foil and bake for 25-30 minutes. Uncover and bake for an additional 5 minutes until cheese is bubbly.
  5. Serve with desired garnishes.
