Dairy

  • 2 cups cottage cheese
  • 2 large eggs

Dry Ingredients

  • cup rolled oats
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Fruits

  • 1 ½ cups fresh blueberries
  • 1 tablespoon lemon zest

Cooking Grease

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease four oven-safe ramekins or small baking bowls.
  • In a mixing bowl, whisk together cottage cheese, eggs, honey, vanilla extract, cinnamon, and salt until well combined.
  • Stir in the rolled oats and lemon zest until evenly distributed.
  • Gently fold in the blueberries, reserving a few for topping.
  • Divide the mixture evenly among the prepared ramekins and sprinkle remaining blueberries on top.
  • Place ramekins on a baking sheet and bake for 30–35 minutes, or until set in the center and lightly golden on top.
  • Remove from the oven and let cool slightly before serving.

Notes

Serve warm, can be topped with extra honey if desired.
