Equipment

  • mixing bowl
  • whisk
  • Heavy-bottom Pot
  • spoon
  • piping bag
  • Scoop

Ingredients

Donut Holes

  • 1 ¾ cups all-purpose flour
  • 6 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup buttermilk room temperature
  • 2 tablespoons Greek yogurt or sour cream
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • ½ cup fresh or frozen blueberries
  • Oil for frying (neutral‑flavored like vegetable or canola)

Lemon Curd Filling

  • ¼ cup butter melted
  • ½ cup lemon juice (fresh)
  • 1 cup granulated sugar
  • 3 large eggs beaten
  • 1 tablespoon lemon zest

Citrus Glaze

  • 1 cup powdered sugar
  • 2–4 tablespoons buttermilk
  • ½ teaspoon vanilla extract

Instructions

Make the Lemon Curd

  • In a heat‑proof bowl, combine melted butter, lemon juice, sugar, beaten eggs, and lemon zest. Microwave the mixture in 1‑minute bursts, whisking between each until thickened and able to coat the back of a spoon. Refrigerate until cool.

Prepare the Donut Holes Dough

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk buttermilk, egg, Greek yogurt, melted butter, and vanilla. Fold wet ingredients into dry until just combined; gently fold in blueberries. Cover and chill the sticky dough for about 30 minutes to firm up.

Fry the Donut Holes

  • Heat oil in a heavy‑bottom pot to 350–370 °F (175–190 °C). Using a small scoop, drop spoonfuls of dough into the hot oil, frying several at a time (do not crowd). Fry 2–4 minutes until golden brown, turning once; remove and drain on paper towels.

Make the Citrus Glaze

  • Whisk powdered sugar with enough buttermilk to form a smooth, pourable glaze; stir in vanilla. Dip warm donut holes into the glaze and let excess drip off.

Fill with Lemon Curd

  • Fit a piping bag with a small round tip. Poke a hole in each glazed donut and gently pipe lemon curd inside until filled.

Notes

Serve warm or at room temperature for best flavor and texture. Store unfilled donut holes in an airtight container for up to 2 days; fill and glaze just before serving.
