Ingredients
  

  • 2 cups cottage cheese (any fat level you prefer)
  • 4 large eggs
  • 3 tablespoons maple syrup or honey
  • 1 cup rolled oats (or quick oats)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1.5 cups fresh or frozen blueberries
  • cooking spray or butter for greasing

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment or lightly grease it.
  • In a blender or food processor, combine cottage cheese, eggs, maple syrup (or honey), oats, vanilla, cinnamon, and baking powder. Blend until mostly smooth.
  • Stir in 1 cup of blueberries, then pour the mixture into your prepared baking dish.
  • Scatter the remaining blueberries evenly over the top.
  • Let the batter rest for about 10 minutes to thicken slightly.
  • Bake for 40–45 minutes, until the center is set and a toothpick comes out clean.
  • Remove from the oven and let cool 10–15 minutes before slicing into 9 squares.
