Whipped Cheese Base

  • 1 cup Ricotta whole milk recommended
  • 1 package Boursin Cheese 5.2 oz

Bruschetta Topping

  • 2 cups Tomatoes seeded and diced small
  • ¼ cup Yellow Onion diced finely
  • 2 cloves Garlic minced
  • ½ cup Fresh Basil roughly chopped (additional for garnish)
  • 2 tablespoon Olive Oil
  • ½ teaspoon Sea Salt
  • ½ teaspoon Black Pepper
  • 1 Balsamic Glaze (optional) for drizzling

Preparation

  • In a food processor or mixing bowl, combine ricotta and Boursin cheese. Blend until smooth and creamy, about 1–2 minutes. Spread evenly into the bottom of a shallow serving dish.
  • In a medium bowl, mix the seeded and diced tomatoes, onion, garlic, basil, olive oil, salt, and pepper. Let sit at room temperature for 10-15 minutes to develop flavor.
  • Spoon the bruschetta mixture evenly over the whipped cheese base. Drizzle balsamic glaze over the top and garnish with fresh basil.
  • Pair with toasted baguette slices, pita chips, or crackers. Serve immediately or refrigerate until ready to enjoy.

Notes

For best flavor, use fresh, ripe tomatoes. Whip the cheese mixture ahead of time and assemble just before serving for a quick appetizer. Try adding a sprinkle of crushed red pepper flakes for a little heat.
