Onion Rings
- 1 large onion, sliced into thick rings
- 8 sticks mozzarella cheese, cut into pieces to fit rings
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon fine salt
- 1 cup milk
- 1 large egg, beaten
- 1 cup Panko bread crumbs for extra crunch
- 2 cups cooking oil for frying
- Toothpicks to secure the rings
- Optional: marinara sauce or garlic aioli for dipping
Instructions
Pair onion rings by placing a smaller ring inside a larger one and tuck a piece of mozzarella between them. Secure each stuffed ring with a toothpick to keep the cheese in place.
In a bowl, mix the flour, baking powder, and salt. Dredge each stuffed onion ring in this dry mix and set on a rack.
In another bowl, whisk together the milk and beaten egg to form the batter. Add this batter to the dry ingredients and stir until smooth.
Dip the dredged onion rings into the batter, letting excess drip off. Press into the Panko breadcrumbs to coat all sides.
Heat oil in a deep pot to about 350 °F (175 °C). Fry a few rings at a time until golden brown and crispy, turning once.
Remove with a slotted spoon and drain on paper towels. Remove toothpicks and serve warm with your favorite dip.
