Equipment

  • large bowl

Ingredients

Bread

  • 3 rolls white sub rolls

Spread and Seasoning

  • Unsalted butter softened
  • Garlic powder
  • Mayo

Salad and Chicken

  • 1 package Caesar salad kit 10-ounce
  • 1 batch chicken cutlets
  • Parmesan cheese optional

Instructions

Preparation

  • Cook chicken cutlets or dice up rotisserie chicken to get 1 cup.
  • Brush the inside of each sub roll generously with softened butter. Sprinkle lightly with garlic powder, then toast in a skillet or broil in the oven until golden and slightly crisp. Let cool slightly, then generously spread mayo on both sides of the rolls.
  • Pour the contents of the Caesar salad kit into a large bowl. Use tongs to mix until well combined. If using rotisserie chicken instead of crispy chicken, add to the salad.
  • Divide the salad mixture evenly among the rolls. Divide chicken cutlets evenly on top. Grate fresh Parmesan cheese over the top, if desired. Close the sandwich and enjoy!

Notes

Packaged chopped Caesar salad kits work best because the lettuce is already cut into small pieces. Many grocery stores offer hot-and-ready rotisserie chicken! That works great if you don't want to prepare the crispy chicken. Like most sandwiches, these subs won't store well. Keep the ingredients separate until you're ready to enjoy.
