Ingredients
  

Spice Mix

  • 2 tablespoon ground cumin
  • 2 tablespoon ground coriander
  • 2 tablespoon Kashmiri chilli powder or 2 tablespoon sweet paprika mixed with 1 teaspoon medium chilli powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground fenugreek
  • 1 pinch cloves

Chicken Tikka

  • 1 tablespoon spice mix or 1 tablespoon tandoori masala powder
  • 3 cloves garlic crushed
  • 20 g fresh root ginger grated
  • 2 tablespoon yoghurt
  • 6 lemon juice
  • 4 pieces boneless chicken breasts skinned and diced
  • fresh coriander to serve

Sauce

  • 3 tablespoon vegetable oil
  • 2 onions finely sliced
  • 4 cloves garlic crushed
  • 25 g fresh root ginger grated or finely chopped
  • 1 tablespoon spice mix
  • 3 tablespoon tomato purée
  • 1 teaspoon caster sugar
  • 2 tablespoon yoghurt

Instructions
 

Preparation

  • If making the spice mix from scratch, mix the ground spices together until fully combined.
  • Marinate the chicken by combining the spice mix with garlic, ginger and yoghurt, then coat the chicken pieces and refrigerate.

Sauce

  • Heat oil in a pan, add onions, garlic, and ginger. Cook over medium-low heat for 10 minutes, stirring regularly.
  • Remove lid, cook for another 5 minutes until onions take on some color.
  • Add spices, stir for a minute, then add tomato purée and sugar, season, add 400ml of water and bring to boil. Simmer for 5 minutes.
  • Blitz the sauce until smooth and stir in yoghurt.

Cooking the Chicken and Serving

  • Cook the marinated chicken on a hot griddle or grill for 4-5 minutes on each side.
  • Transfer cooked chicken to the sauce, simmer until hot, and serve with coriander and lemon wedges.

Notes

This dish can be prepared ahead by marinating the chicken and prepping the sauce in advance.
