Chicken Zucchini Stir Fry

Marinade
- 1 lb boneless chicken thigh cut bite sized
- 1 teaspoon cornstarch
- ¼ cup light soy sauce
- 1 teaspoon sesame oil
- 2 teaspoon sugar or honey
- 1 tablespoon rice wine vinegar optional
Stir fry
- 3 garlic smashed
- 1 tablespoon cooking oil
- 1 medium zucchini cut in half lengthwise and sliced
- 1 tablespoon oyster sauce
- ground black pepper optional
Preparation
Cut the chicken into bite-size pieces. In a mixing bowl, add the chicken marinade ingredients. Combine well and set aside to marinate for half an hour.
In a cooking pan or wok, add cooking oil and heat it up on medium high.
Add garlic and chicken along with all the marinade sauce, and stir fry for about 2 minutes or until chicken is no longer translucent. Remove chicken from the heat and set aside, trying to keep the sauce in the pan.
If the pan is too dry, add a little more cooking oil. Then, add zucchini and stir fry for about 5 minutes or until zucchini starts getting tender.
Return the chicken to the pan, add oyster sauce, and sprinkle with ground black pepper (optional). Stir fry for about another 2-3 minutes until chicken is cooked thoroughly and zucchini is tender.
Remove from heat and serve!
