Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 0.5 teaspoon cinnamon
  • 6 tablespoons unsalted butter melted

For the Cinnamon Swirl

  • 0.5 cups packed brown sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons all-purpose flour
  • 4 tablespoons melted butter

For the Cheesecake Filling

  • 24 ounces cream cheese softened
  • 1 cups granulated sugar
  • 1 cups sour cream
  • 3 large eggs
  • 2 teaspoons vanilla extract

For the Glaze (optional)

  • 1 cups powdered sugar
  • 1-2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

Baking Instructions

  • Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and press the crust mixture into the bottom; bake for 10 minutes and cool.
  • In a small bowl, mix brown sugar, cinnamon, flour, and melted butter to make the cinnamon swirl.
  • In a large bowl, beat cream cheese until smooth, then add sugar, eggs, sour cream, and vanilla until creamy and lump-free.
  • Pour half the cheesecake batter over the cooled crust, then gently dollop half the cinnamon swirl over the top; use a knife to swirl.
  • Pour remaining batter and swirl remaining cinnamon mixture on top.
  • Wrap pan bottom with foil and place in a larger roasting pan; add hot water halfway up the sides and bake for 60–75 minutes until edges are set and center jiggles slightly.
  • Let cheesecake cool in the oven with the door cracked for about 30 minutes. Then refrigerate at least 6 hours or overnight to set.
  • If using glaze: whisk powdered sugar, milk, and vanilla until smooth; drizzle over chilled cheesecake before serving.

Notes

Chilling the cheesecake overnight will enhance the flavors and texture.
