Trim the crusts off the bread slices and use a rolling pin to flatten each slice into a rectangle.
In a small bowl, combine the softened butter, brown sugar, and cinnamon until smooth and spreadable.
Spread the cinnamon-butter mixture evenly over each flattened slice, leaving a small border around the edges.
Roll each slice up tightly into a log and set aside.
In a shallow bowl, whisk together the eggs, milk, and vanilla extract to make the French toast batter.
Heat a skillet over medium heat and add a little butter.
Dip each roll-up into the egg mixture, coating all sides but not soaking excessively.
Place seam-side down in the skillet and cook, turning occasionally, until all sides are golden brown and crisp, about 2–3 minutes per side.
Remove from heat and serve warm. Dust with powdered sugar or drizzle with maple syrup, cream cheese glaze, or your favorite topping.
