Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese full-fat recommended
  • ½ cup shredded Monterey Jack cheese
  • ¼ cup shredded cheddar cheese
  • ¼ cup cooked bacon crumbled (optional)
  • 2 tablespoons chopped chives or green onions
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray for greasing muffin tin

Instructions
 

  • Preheat oven to 325°F (165°C). Lightly grease a muffin tin with cooking spray.
  • Add eggs and cottage cheese to a blender and blend until completely smooth and creamy.
  • Pour the egg mixture into a bowl and stir in Monterey Jack, cheddar cheese, bacon, chives, salt, and pepper.
  • Divide the mixture evenly among the muffin cups, filling each about ¾ full.
  • Place the muffin tin into a larger baking dish and carefully add hot water to the outer dish until it reaches halfway up the sides of the muffin tin (water bath).
  • Bake for 25–30 minutes, or until the egg bites are set but still slightly jiggly in the center.
  • Remove from oven and let cool for 5 minutes before gently removing from the tin.
