Ingredients
  

  • ½ cup cottage cheese, blended smooth full-fat for best texture
  • 2 large eggs
  • cup almond flour
  • ¼ cup unsweetened cocoa powder
  • ¼ cup powdered sweetener erythritol or favorite keto sweetener
  • 2 tablespoon melted butter or coconut oil
  • ½ teaspoon vanilla extract
  • ¼ teaspoon baking powder
  • pinch salt
  • 2 tablespoon sugar-free chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a mini muffin pan with liners or lightly grease it.
  • Blend the cottage cheese until completely smooth – this creates the fudgy brownie texture.
  • Add eggs, sweetener, melted butter (or coconut oil), and vanilla extract to the blended cottage cheese and blend again until fully combined.
  • In a separate bowl, whisk together almond flour, cocoa powder, baking powder, and salt.
  • Pour the wet mixture into the dry and stir until well mixed. Fold in sugar-free chocolate chips if using.
  • Spoon the batter into the prepared muffin pan cups about ¾ full.
  • Bake for 12–15 minutes (mini) or 18–20 minutes (standard) until set with moist crumbs.
  • Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

For best texture, use full-fat cottage cheese and let the bites cool completely before serving.
