- ½ cup full-fat cottage cheese blended smooth for creamy texture
- 1 large egg
- 2 tablespoon cocoa powder or 2 oz melted dark chocolate
- 2-3 tablespoon sweetener of choice maple syrup, honey, or sugar
- ¼ teaspoon vanilla extract
- a pinch salt optional
- 1 teaspoon chocolate chips or a square of chocolate for the molten center (optional)
Preheat oven to 350 °F (175 °C) and lightly grease two small ramekins.
In a blender or food processor, combine cottage cheese, egg, cocoa (or melted chocolate), sweetener, vanilla, and a pinch of salt. Blend until completely smooth.
Divide the batter between the prepared ramekins, filling about three-quarters full.
If using, drop chocolate chips or a small chocolate square into the center of each ramekin, then cover with a bit more batter.
Place the ramekins on a baking tray and bake for 12–15 minutes — the edges should be set while the centers remain slightly jiggly.
Allow to cool 1–2 minutes before serving warm (the molten center will flow as you dig in).
