  • 1 egg
  • ¼ cup pure maple syrup

  • ½ teaspoon baking powder
  • Pinch of salt

  • Preheat Oven: Heat the oven to 350 °F (175 °C) and line a baking sheet with parchment paper.
  • Blend Wet Ingredients: In a food processor or blender, combine cottage cheese, egg, maple syrup, and vanilla extract; blend until smooth.
  • Combine Dry Ingredients: Transfer the blended cottage cheese mixture to a mixing bowl. Stir in quick oats, baking powder, and a pinch of salt until well incorporated.
  • Optional Add-Ins: If using, fold in mini chocolate chips or nuts at this stage.
  • Shape Cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each with the back of a spoon or your fingers.
  • Bake: Bake for 12–15 minutes, until the edges are lightly golden and the centers feel set.
  • Cool & Serve: Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Enjoy slightly warm or at room temperature.
