Ingredients
  

  • 1 can crushed pineapple well drained
  • 1 package cream cheese softened
  • 1 package whipped topping thawed (like Cool Whip)
  • 1 packet instant vanilla pudding mix
  • 1.5 cups mini marshmallows
  • 0.5 cup shredded sweetened coconut optional
  • 0.5 cup chopped pecans or walnuts optional
  • 1 teaspoon vanilla extract
  • 1 garnish maraschino cherries or fresh pineapple chunks optional

Instructions
 

  • Drain the crushed pineapple very well and set aside.
  • In a large mixing bowl, beat the softened cream cheese with the instant vanilla pudding mix until smooth and creamy.
  • Gently fold in the drained crushed pineapple and mini marshmallows.
  • Add the whipped topping and vanilla extract, folding until the mixture is light and fluffy.
  • If using, fold in shredded coconut and nuts for extra texture and tropical flavor.
  • Cover and refrigerate for at least 1–2 hours to allow the flavors to meld and the texture to set.
  • Scoop into serving bowls or a large chilled dish. Garnish with maraschino cherries or pineapple chunks before serving if desired.

Notes

For best results, chill the dessert for a longer time to enhance flavor melding.
