- 2 cups fresh corn kernels cut from cobs or well-drained if using frozen
- 1 cup shredded sharp cheddar cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 large eggs
- ¼ cup finely chopped green onions
- Neutral oil like vegetable or canola for frying
- Salt and pepper to taste (optional but recommended)
If using fresh corn, cut the kernels off the cob. Chop green onions.
In a large bowl, whisk together the flour and baking powder so it’s evenly distributed.
In another bowl, beat the eggs. Add corn kernels, shredded cheddar, and green onions to the eggs and mix.
Pour the wet ingredients into the dry ingredients and fold gently until just combined. Avoid overmixing to keep the fritters light and tender.
Warm a thin layer of neutral oil in a skillet over medium heat until shimmering.
Drop spoonfuls of batter into the hot oil, spacing them apart. Fry about 3 minutes per side, or until golden and crispy. Flip only once for best texture.
