Ingredients
  

  • 2 cups fresh corn kernels cut from cobs or well-drained if using frozen
  • 1 cup shredded sharp cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • ¼ cup finely chopped green onions
  • Neutral oil like vegetable or canola for frying
  • Salt and pepper to taste (optional but recommended)

Instructions
 

  • If using fresh corn, cut the kernels off the cob. Chop green onions.
  • In a large bowl, whisk together the flour and baking powder so it’s evenly distributed.
  • In another bowl, beat the eggs. Add corn kernels, shredded cheddar, and green onions to the eggs and mix.
  • Pour the wet ingredients into the dry ingredients and fold gently until just combined. Avoid overmixing to keep the fritters light and tender.
  • Warm a thin layer of neutral oil in a skillet over medium heat until shimmering.
  • Drop spoonfuls of batter into the hot oil, spacing them apart. Fry about 3 minutes per side, or until golden and crispy. Flip only once for best texture.
  • Remove fritters with a slotted spoon and drain on paper towels. Serve warm.
