Ingredients
  

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cotton candy extract optional but adds carnival flair
  • ¼ cup whipped topping or Cool Whip
  • 2 tablespoons heavy cream

Dough and Coating

  • 1 package refrigerated biscuit dough (8-count)
  • 2 tablespoons all-purpose flour for dusting
  • 4 cups vegetable oil for frying
  • 1 cup granulated sugar
  • pink and blue food coloring optional for coating
  • Fresh cotton candy for garnish
  • Powdered sugar or white chocolate drizzle optional

Instructions
 

Preparation

  • In a mixing bowl, beat softened cream cheese until smooth. Add powdered sugar, vanilla, and cotton candy extract; beat until light and fluffy.
  • Fold in whipped topping and heavy cream until you have a silky, mousse-like cheesecake filling.
  • Chill the mixture in the fridge for 30 minutes to firm up.
  • On a lightly floured surface, roll out refrigerated biscuit dough to about ⅛-inch thick.
  • Scoop chilled cheesecake filling into small portions (~1–2 tablespoons), place in the center of each dough round, and seal tightly to form a smooth ball.

Frying

  • Heat vegetable oil in a deep pot to 350°F (175°C). Fry the cheesecake bombs in batches for 1–2 minutes per side or until golden and crispy.
  • In a shallow bowl, mix granulated sugar with optional cotton candy flavoring and food coloring for a fun pastel coating.
  • Roll the warm bombs in the sugary coating until evenly covered.
  • Garnish with a tuft of fresh cotton candy, a dusting of powdered sugar, or a drizzle of white chocolate before serving.
  • Serve warm for best crisp texture and creamy center.
