Ingredients
  

  • 1 packet dry onion soup mix
  • 10.5 ounce low sodium cream of mushroom soup
  • 14 ounce low sodium beef broth
  • 1.5 pounds beef chuck roast
  • 1.5 Tablespoons lemon pepper seasoning or any seasoning flavors you prefer

To thicken gravy

  • 2 Tablespoons butter
  • 3 Tablespoons flour

Instructions
 

  • In a 5 quart slow cooker, combine the dry onion soup mix, cream of mushroom soup, and beef broth. Whisk to combine.
  • Cut the beef chuck roast into smaller pieces if desired. Sprinkle lemon pepper seasoning on the beef and stir to coat.
  • Add the coated beef to the crock pot and stir well.
  • Cover and cook on low for 8 hours.
  • Optional to thicken the gravy: About 20 minutes before serving, melt the butter in a medium pot. Add flour and whisk together.
  • Pour in 2 cups of the beef broth mixture from the crock pot into the butter/flour mixture and whisk until smooth. Increase heat until it thickens.
  • Once thickened, pour back into the crock pot and stir well before serving.
  • Serve over rice, noodles, or enjoy as is!

Notes

For best results, allow the beef to simmer for the full 8 hours to achieve maximum tenderness.
