- 20–25 pieces puris (crispy hollow shells)
- 2 medium boiled potatoes, mashed
- ½ cup boiled chickpeas
- 1 cup thick plain yogurt (dahi), whisked smooth
- ½ cup green chutney (mint & coriander)
- ½ cup tamarind chutney
- 1 teaspoon roasted cumin powder
- ½ teaspoon red chili powder
- to taste salt
- ½ cup sev (crispy chickpea noodles)
- 2 tablespoons chopped fresh coriander
- 2 tablespoons pomegranate seeds (optional)
Gently crack a small hole on top of each puri.
Fill each puri with a small spoon of mashed potatoes and a few chickpeas.
Spoon some green chutney and tamarind chutney into each puri.
Add a generous spoonful of whisked yogurt on top.
Sprinkle with roasted cumin powder, red chili powder, and salt.
Garnish with sev, chopped coriander, and pomegranate seeds.
Serve immediately while the puris are still crisp.
