Ingredients
  

  • 20–25 pieces puris (crispy hollow shells)
  • 2 medium boiled potatoes, mashed
  • ½ cup boiled chickpeas
  • 1 cup thick plain yogurt (dahi), whisked smooth
  • ½ cup green chutney (mint & coriander)
  • ½ cup tamarind chutney
  • 1 teaspoon roasted cumin powder
  • ½ teaspoon red chili powder
  • to taste salt
  • ½ cup sev (crispy chickpea noodles)
  • 2 tablespoons chopped fresh coriander
  • 2 tablespoons pomegranate seeds (optional)

Instructions
 

  • Gently crack a small hole on top of each puri.
  • Fill each puri with a small spoon of mashed potatoes and a few chickpeas.
  • Spoon some green chutney and tamarind chutney into each puri.
  • Add a generous spoonful of whisked yogurt on top.
  • Sprinkle with roasted cumin powder, red chili powder, and salt.
  • Garnish with sev, chopped coriander, and pomegranate seeds.
  • Serve immediately while the puris are still crisp.
