Base Ingredients

  • 4 pieces English muffins split in half
  • 4 large eggs
  • ½ cup pizza sauce or marinara
  • 1 cup shredded mozzarella cheese
  • ½ cup cooked breakfast meat crumbled (optional)
  • ¼ cup diced bell peppers optional
  • 1 tablespoon olive oil or melted butter for toasting
  • fresh herbs for garnish (optional)
  • salt to taste
  • pepper to taste

Cooking Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Place the English muffin halves on the baking sheet, cut side up. Brush lightly with olive oil or melted butter and toast in the oven for about 3–5 minutes until just golden.
  • Spread about 1 tablespoon of pizza sauce on each toasted muffin half.
  • Sprinkle shredded mozzarella over the sauce on each muffin.
  • Add scrambled eggs and cooked breakfast meat or diced bell peppers if using.
  • Bake for 8–12 minutes, or until eggs are set and cheese is melted and bubbly.
  • Season with salt and pepper, garnish with fresh herbs if desired, and serve warm.
