Preparation Steps

  • In a mixing bowl, whisk together the cottage cheese and eggs until smooth. For a creamier texture, blend in a blender first.
  • Stir in vanilla, honey/maple syrup, lemon zest, and spices if using.
  • Gently fold half of the blueberries into the mixture. Pour the batter into the prepared dish and scatter the remaining berries on top.
  • Bake for 25–30 minutes until puffed, lightly golden, and slightly firm in the center.
  • Let cool about 10 minutes before slicing. Enjoy warm for a softer texture, or chill for a firmer slice.
