Filling
- 5 cups fresh strawberries, hulled and quartered
- ¼ cup granulated white sugar
- 1 teaspoon vanilla extract
- 3 tablespoons cornstarch
Topping
- 1 cup all-purpose flour
- ¾ cup old fashioned oats
- ⅔ cup granulated white sugar
- ⅔ cup packed brown sugar
- ½ teaspoon salt
- ¾ teaspoon cinnamon
- ½ cup butter, melted (1 stick)
Directions
Preheat oven to 350°F (175°C). Grease a deep dish pie plate or large baking dish with butter or cooking spray and set aside.
In a large bowl, combine the quartered strawberries and granulated sugar, stirring until the strawberries absorb the sugar. Add the cornstarch and vanilla extract and mix until evenly coated.
Pour the strawberry mixture into the prepared baking dish.
In a separate bowl, combine the flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Pour in the melted butter and stir until well coated and crumbly.
Evenly sprinkle the crumb mixture over the strawberries.
Bake for 35–40 minutes, until the fruit is bubbly and the topping is golden brown.
Let cool slightly before serving. Top with vanilla ice cream if desired for extra decadence.
