Ingredients
  

Marinade Ingredients

  • 1 cup plain Greek yogurt helps tenderize chicken
  • 2 tablespoons olive oil
  • 4 cloves garlic crushed
  • 2 teaspoons dried oregano or 1 tablespoon fresh, finely chopped
  • 1 unit lemon juice Juice of 1 lemon
  • 1 teaspoon dried parsley
  • 0.5 teaspoon salt
  • Freshly ground black pepper to taste

Preparation

  • In a medium bowl, combine the Greek yogurt, olive oil, crushed garlic, dried oregano, lemon juice, dried parsley, salt, and a pinch of black pepper. Mix until smooth and well blended.
  • Place your chicken pieces into a large resealable bag or airtight container. Pour the marinade over the chicken, sealing or covering it well.
  • Massage the marinade into the chicken so every piece gets coated. Marinate in the refrigerator for at least 30 minutes, ideally 2–6 hours, for deeper flavor and tenderness.
  • When ready, remove the chicken from the marinade and cook it by grilling, baking, or pan-searing until fully cooked and juicy.
  • Discard any leftover used marinade that has touched raw chicken to avoid food safety issues.

Notes

The marinade can be used for up to 3 lbs of chicken for optimal flavor and tenderness.
