Tzatziki Sauce
- ½ cup plain Greek yogurt
- ¼ cup shredded cucumber excess water squeezed out
- ½ teaspoon kosher salt
- 2 teaspoon olive oil
- 2 teaspoon fresh lemon juice
- 2 teaspoon dried dill
- 2 cloves garlic minced
Stuffed Peppers
- 6 pieces red bell peppers tops cut off, seeds removed and cut in half
- 1 lb ground turkey or chicken
- 3 cloves garlic minced
- ¼ cup red onion minced
- 2 tablespoon fresh oregano chopped
- 1 piece Roma tomato chopped
- ½ cup zucchini chopped
- 1 cup cooked quinoa
- 1 teaspoon kosher salt
- ¼ cup fat-free crumbled feta cheese
Cooking Instructions
Preheat oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with non-stick spray and arrange the pepper halves inside.
In a bowl, combine all tzatziki sauce ingredients; mix well and set aside for at least 10 minutes to let flavors meld.
Heat a large skillet over medium heat. Add ground turkey and cook, breaking into small pieces for about 3 minutes.
Add minced garlic and red onion; cook until turkey is fully browned and onions have softened.
Drain any excess liquid, then stir in oregano, chopped tomato, zucchini, quinoa, and salt. Mix until well combined.
Spoon the mixture into each pepper half, filling well. Bake uncovered for 25 minutes.
Sprinkle crumbled feta on top and bake for an additional 10 minutes.
Remove from oven, drizzle each pepper with tzatziki sauce, and serve warm.
