- 2.5 cups plain all-purpose flour
- 1 tablespoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 0.33 cup sugar add up to ½ cup if you prefer sweeter
- 2 large eggs lightly whisked
- 0.67 cup oil canola, light olive, or vegetable
- 1 cup Greek yogurt full-fat or reduced-fat
- 0.25 cup milk add more if batter seems too thick
- 1 teaspoon vanilla extract optional
- 1.5 cups chocolate chips
Preheat oven to 355°F/180°C and line a 12-cup muffin pan with liners; lightly spray with oil.
In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
In a separate bowl or jug, combine eggs, oil, Greek yogurt, milk, and vanilla extract until smooth.
Pour the wet mixture into the dry ingredients and stir gently until just combined — a few lumps are okay.
Fold in the chocolate chips with a spatula.
Spoon batter into the muffin liners, filling almost to the top.
Bake for 17–25 minutes, checking after 17 minutes; muffins are done when golden and a skewer comes out clean.
Cool completely on a wire rack before peeling off liners (cooling helps them release easily).
