Ingredients
  

Beef Filling

  • 1 lb flank steak or ground beef Use lean sirloin for lighter version
  • 3 cloves garlic minced
  • 2 tablespoon soy sauce use tamari for gluten-free
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar or maple syrup for refined sugar-free
  • 1 teaspoon chili flakes adjust to taste
  • 2 tablespoon vegetable oil
  • 1 cup Thai basil leaves fresh

Rolls

  • 12 rice paper wrappers
  • 1 head butter lettuce leaves separated
  • 1 large cucumber julienned
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro
  • 2 carrots julienned
  • 1 package rice vermicelli noodles cooked and drained

Dipping Sauce

  • ¼ cup sweet chili sauce
  • 2 tablespoon lime juice fresh-squeezed
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sesame oil

Instructions
 

Cooking Beef

  • Heat oil in a large skillet or wok over high heat. Add minced garlic and cook for 30 seconds until fragrant. Add beef and break it up as it cooks. Stir in soy sauce, fish sauce, brown sugar, and chili flakes. Cook until caramelized, about 5–7 minutes. Stir in Thai basil leaves, remove from heat, and let cool slightly.

Preparing Rolls

  • Fill a large shallow bowl with warm water (about 100–110°F). Lay out rice paper, vegetables, herbs, noodles, and cooked beef. Keep a damp towel on your workspace to prevent sticking.
  • Dip one rice paper wrapper into warm water for 3–5 seconds, then place it flat on a damp towel. Let it rest for about 30 seconds until soft and pliable.
  • Layer lettuce, noodles, cucumber, carrots, beef mixture, and herbs in the center of the softened wrapper. Fold the bottom edge over the filling, tuck in the sides, and roll tightly to seal. Repeat with remaining ingredients.
  • Arrange rolls seam-side down on a platter. Whisk together sweet chili sauce, lime juice, soy sauce, and sesame oil for dipping. Serve immediately and enjoy within 2 hours for the best texture.
