Ingredients
  

  • 1 head Romaine lettuce large
  • 1 piece red bell pepper seeded and julienne
  • 0.5 quarter cucumber sliced
  • 6 quarter roma or san marzano tomatoes sliced
  • 0.25 medium red onion peeled and thinly sliced
  • 0.5 cup pepperoncinis sliced, no juice
  • 0.25 cup Castelvetrano olives pitted
  • 0.25 cup black olives pitted
  • 1 teaspoon dry oregano
  • 0.25 cup parmigiano Reggiano cheese finely grated
  • 3 tablespoons red wine vinegar
  • 0.25 cup olive oil or more to taste
  • coarse salt to taste
  • fresh cracked pepper to taste

Instructions
 

  • Cut the lettuce down to bitesize pieces.
  • Prepare the vegetables.
  • Add the lettuce to a large bowl with the peppers, tomatoes, cucumbers, onions, pepperoncini’s, oregano, parmigiano, salt, and pepper.
  • Pour the vinegar and olive oil around the outside edges of the bowl.
  • Mix the salad using a large spoon and fork until combined.
  • Serve with additional parmigiano cheese.

Notes

Pouring the vinegar and oil around the edges of the bowl helps the dressing mix in more evenly and keeps the greens from getting weighed down or soggy. Use the freshest ingredients you can find for the best flavor. Slice vegetables evenly for a balanced mix. Season just before serving to keep vegetables crisp.
