Ingredients
  

Chocolate Cake Layers

  • 2 cups almond flour
  • ¾ cup granular keto sweetener like Swerve
  • 6 tablespoon unsweetened cocoa powder
  • ⅓ cup unflavored whey protein powder
  • 2.5 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup sour cream softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2–4 tablespoon water as needed

Peanut Butter Frosting

  • ¾ cup creamy natural peanut butter
  • 4 oz cream cheese softened
  • ½ cup unsalted butter softened
  • ¾ cup powdered keto sweetener
  • 1 teaspoon vanilla extract
  • ¾ cup heavy whipping cream

Chocolate Glaze

  • ¼ cup heavy whipping cream
  • 1 oz unsweetened chocolate chopped
  • 1 tablespoon powdered keto sweetener
  • 1 tablespoon allulose optional, for shine

Instructions
 

Preparation

  • Preheat oven to 325 °F (165 °C) and grease three 8-inch round cake pans. Line bottoms with parchment and grease again.
  • In a bowl, whisk together almond flour, sweetener, cocoa powder, protein powder, baking powder, and salt.
  • Stir in sour cream, eggs, and vanilla. Add water, 1 tablespoon at a time, until batter is thick but pourable.
  • Divide batter among prepared pans and bake for 15–20 min or until just firm. Cool completely.

Frosting

  • For frosting, beat peanut butter, cream cheese, and butter until smooth. Add sweetener and vanilla.
  • Whip heavy cream separately until stiff peaks form, then fold into peanut butter mixture.

Assembly

  • Place one cake layer on a serving plate, spread ¼ of frosting, then repeat with remaining layers. Chill for 1 hour to firm up.

Glaze

  • For glaze, heat cream to a simmer, remove from heat, add chocolate and let melt.
  • Whisk in sweetener and allulose, cool slightly, then drizzle over cake, letting it drip down the sides.

Serving

  • Add optional toppings like keto peanut butter cups or sprinkles.
