For the Crust
- 12 sheets full-size graham cracker crushed into fine crumbs
- 2 tablespoon granulated sugar
- ½ teaspoon kosher salt
- 8 tablespoon unsalted butter melted and cooled
For the Key Lime Filling
- 8 oz cream cheese room temperature
- ¾ cup boiling water
- 1 box lime-flavored gelatin dessert mix (3-oz)
- 1 can sweetened condensed milk (14-oz)
- ½ cup Key lime juice (fresh squeezed or bottled)
- ¼ teaspoon kosher salt
- whipped cream for serving
Instructions
Line an 8×8-inch pan with parchment paper, leaving a sling to remove bars easily later.
Mix graham cracker crumbs with sugar and salt in a bowl. Stir in melted butter until crumbs are fully moistened, then press firmly into the bottom of the pan to form the crust.
In a heat-proof bowl, whisk the lime gelatin mix into the boiling water until dissolved; chill briefly in the fridge but do not let it set.
In a food processor or stand mixer, combine the room-temperature cream cheese, sweetened condensed milk, Key lime juice and kosher salt. Blend until completely smooth.
With the mixer running, slowly pour in the cooled but still liquid gelatin mixture until fully incorporated and silky.
Pour the lime filling over the graham cracker crust and spread evenly to smooth the top.
Cover and refrigerate for at least 6 hours or overnight until firm before slicing into squares.
Serve chilled with a dollop of whipped cream, lime zest, or extra lime slices if desired.
