Mongolian Ground Beef Noodles – Easy Griddle or Skillet Recipe

Ingredients
  

  • 8 oz lo mein noodles See notes
  • 1 lb lean ground beef like 90/10 or 93/7
  • ½ cup beef broth
  • ⅓ cup low sodium soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon cornstarch
  • 5 cloves minced garlic
  • 2 teaspoons minced ginger
  • ½ teaspoon black pepper
  • 1 tablespoon high-heat cooking oil like avocado oil
  • 3 pieces green onions thinly sliced, whites and greens separated

Instructions
 

  • Boil the noodles according to package instructions, but reduce the cooking time by about 1-2 minutes. Drain noodles and set aside.
  • Preheat griddle or large skillet to medium heat, aiming for a temperature of about 400°F.
  • Prepare the sauce by mixing beef broth, soy sauce, brown sugar, hoisin sauce, black pepper, and cornstarch in a bowl, then mix in 75% of the ginger and garlic.
  • Cook the ground beef in small chunks on the griddle or skillet for 2-3 minutes until charred on the first side.
  • Add the whites of the green onions to the beef when it's halfway cooked and sauté together.
  • Add oil to the griddle or skillet, then the remaining garlic and ginger, and toast for about 1 minute.
  • Add the drained noodles to the griddle or skillet and mix briefly with garlic and ginger, then cook untouched for about 1-2 minutes.
  • Combine the cooked ground beef with the noodles and pour in the prepared sauce.
  • Toss to coat the noodles in sauce, and sauté for an additional 2-3 minutes until the sauce thickens.
  • Sprinkle with the tops of the green onions and serve immediately.

Notes

Noodle choice: Wheat-based organic Chinese lo mein noodles preferred. Can substitute linguini, fettuccini, spaghetti, or udon noodles. For spice, add red pepper flakes or sriracha. Adding vegetables like broccoli, bell peppers, or carrots is encouraged.
