Pie Crust
- 1 9-inch prepared chocolate cookie or graham cracker pie crust
Filling
- 1 3.9 oz package instant chocolate pudding mix
- 1.75 cups cold whole milk
- 1 cup whipped topping (like Cool Whip), thawed
- 1.5 cups sweetened shredded coconut, toasted reserve half for topping
- 1 cup chopped pecans, toasted reserve half for topping
- 1 14–15 oz can sweetened condensed milk
- 2 tablespoons unsalted butter, melted
- 0.5 teaspoon vanilla extract
- Optional: caramel sauce, chocolate shavings, or extra pecans for garnish
Preparation
In a large bowl, whisk together the chocolate pudding mix and cold milk for about 2 minutes until the mixture begins to thicken and is smooth.
Gently fold in the whipped topping until well combined and the filling is light and fluffy.
Stir in the sweetened condensed milk, melted butter, and vanilla extract until evenly incorporated.
Add half of the toasted coconut and half of the toasted pecans to the filling, reserving the rest for topping.
Pour the creamy chocolate filling into the prepared pie crust and smooth the top with a spatula.
Sprinkle the reserved coconut and pecans evenly over the surface of the pie.
Cover the pie and refrigerate for at least 4 hours or overnight to let it set firmly.
