- 3 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- 4 teaspoons baking powder
- ½ teaspoon kosher salt
- 2 large eggs
- 1 large egg yolk
- ½ cup granulated sugar divided
- 1 tablespoon granulated sugar for topping
- ½ cup light brown sugar
- ½ cup unsalted butter melted
- 1 cup milk
- 1 cup plain Greek yogurt
- 2 teaspoons vanilla extract
- 2 tablespoons finely grated orange zest
- 1 cup old-fashioned rolled oats
- 3 cups fresh or frozen cranberries
Instructions
Preheat oven to 350 degrees F. Grease a 12 cup standard muffin pan or line it with paper muffin wrappers.
In a medium bowl, combine eggs, egg yolk, ½ cup of the granulated sugar, brown sugar, melted butter, milk, yogurt, vanilla, and orange zest.
Stir in the oats and let stand for 10 minutes to soften them.
Meanwhile, in a large bowl, whisk together flour, baking soda, baking powder and salt.
Add the egg mixture to the dry ingredients and mix with a rubber spatula until just combined. Fold in the cranberries until evenly distributed.
Fill the muffin cups all the way to the top and sprinkle with the extra tablespoon of sugar.
Bake in the preheated oven for 22-25 minutes, until a toothpick inserted in the center comes out clean. Transfer to a wire rack to cool completely.
