Ingredients
  

Steak and Vegetables

  • 2 steaks ribeye or sirloin
  • 1 pound baby potatoes, halved
  • 1 large onion, sliced

Cooking Ingredients

  • 3 tablespoons olive oil divided
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or rosemary

Cooking Instructions

  • Season the steaks on both sides with salt, pepper, and paprika. Let rest at room temperature for 15 minutes.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  • Add potatoes cut-side down and cook for 8–10 minutes until golden and crispy. Flip and cook another 5 minutes. Remove and set aside.
  • In the same skillet, add onions and cook for 5–7 minutes until soft and caramelized. Add garlic and cook for 1 minute.
  • Push onions to the side and add remaining olive oil and butter.
  • Add steaks and sear for 3–4 minutes per side (for medium-rare), or to desired doneness.
  • Return potatoes to the skillet, sprinkle with thyme, and toss everything together for 1–2 minutes.
  • Let steaks rest for 5 minutes before slicing and serving.
