  • 5 oz low-fat cottage cheese blended smooth
  • 3 tablespoon powdered peanut butter or vanilla protein powder
  • 1–2 tablespoon calorie-free sweetener or your preferred sweetener
  • 1 tablespoon natural peanut butter or cashew butter
  • ½ teaspoon vanilla extract
  • Dash of salt optional, enhances flavor
  • 1 tablespoon mini chocolate chips or sugar-free chocolate chips or cacao nibs

Instructions
 

  • Add the low-fat cottage cheese to a blender and blend until smooth with no large curds.
  • Mix in the powdered peanut butter (or protein powder), sweetener, peanut butter (or cashew butter), vanilla extract, and a dash of salt if using.
  • Fold in the mini chocolate chips or cacao nibs.
  • Enjoy your cookie dough straight away with a spoon!

Notes

For a peanut-free version, swap powdered peanut butter and peanut butter for vanilla protein powder and cashew butter. You can use sugar-free chocolate chips to lower sugar and calories. This recipe is naturally no-bake, high-protein, and ready in about 10 minutes.
