Ingredients
  

Hash Brown Casserole

  • 1 26 ounce bag frozen shredded hash brown potatoes
  • 3 tablespoons butter melted
  • 1.5 cups pimento cheese can use bought or homemade
  • 8 ounces sour cream
  • ¾ cup chicken broth
  • cup chopped onion
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup cheddar cheese to sprinkle on top

Preparation Steps

  • Spray the 9 x 13 casserole dish. Toss frozen hash browns in melted butter in a large mixing bowl.
  • Add pimento cheese, sour cream, chicken broth, onion, salt and pepper. Mix with spoon. Spread in baking dish.
  • Top with shredded cheddar cheese. Bake in preheated 350 degree oven, uncovered, for 45 to 55 minutes until potatoes are cooked and brown on top.
  • Makes about 8 servings.
